Culinary Program
The One Step Culinary Training Program and Catering Company, established in 2007, with the generous support of the Nina Mason Pulliam Charitable Trust is the only Culinary Training Program that provides food services training and employment opportunities for individuals with Developmental Disability in the Southwest. Under the guidance of culinary professionals including Culinary Director, Chef and former restaurant owner, James Rio, our students work and cook in a state of the art commercial kitchen to produce extraordinary food. Students learn basic food preparation, kitchen safety, table service, and knowledge in healthy nutrition. In addition to cooking lunch every afternoon for our day program participants, our culinary program also produces a wide array of catering products such as box lunches, take home dinner meals, and house made packaged specialties such as infused vinegars and oils, delicious biscotti’s, and Jim’s secret recipe of sweet spiced nuts to name a few. Most exciting is the opportunity for culinary program graduates to become employees of our Catering Company, where they put their knowledge to the test. In 2008, our Catering Team handled 23 catered events for as many as 250 diners at a seating. In 2009, we expect to triple that amount.
